I guess, baring size issues, just about every breed could be mated with every other breed. We'll have boodles, coodles, doodles, foodles, goodles, and hoodless. We can just work our way down to "voodles!"...
Standard Poodles are roughly the same size as a Vizsla ;)

...All joking aside - why?
The all mighty dollar. But I can see "breeders" reasoning it with Standard Poodles originally being used for hunting, so let's make a new non-shedding breed with the drive of a Vizsla. Conveniently forgetting, of course, that Vizslas shed, so there's a 50/50 chance the puppies will, too. Maybe they'll go the route that mixing Poodle in will bring down the energy level of the Vizsla.

I know that anyone who is purposely breeding them is 10 to 1 a puppy mill or a back yard breeder, and are in it for the almighty dollar.

Wouldnt it be easier to try to breed high drive standard poodle instead of trying to get the right coat and drive from a mix?

Being a mix, the puppy's/dog's characteristics will be pretty uncertain. You could have a combination of some traits from both parents (and not necessarily all of the desirable ones), have the dog look like one but act like the other, or you could have a canine that displays almost only qualities from one parent. Mixes are generally a gamble.

You can probably expect it to be a high energy, lanky, large dog.
