why do kittens do this?

when a kitten has already grown up it's entire life around dogs and never hisses or bats an eye at a dog then why do they begin to get so defensive when they move to another house with a dog? Is it just the fact that it is a new dog they're around or do the kittens want to establish a dominance over a dog they've never met? I'm confused.

Same dog or different dog? If it's a different dog, the answer is obvious- the kitten doesn't know if this dog is safe, and the best defense is a good offense.

If it's the same dog, cats, on average, are so totally unsocialized that the slightest change in environment can make them regress to the point of losing litter training.

Cats take changes very hard and will take them a bit to get back together. My cats hid behind the washer and attacked each other - they're brother and sister and have been living together since birth (7 years now). Your cats will calm down. Don't try to interfere unless the cats are attacking the dog from pure malice. Good luck with everything, they should calm down in a month or so. If it is a new dog then they'll have to get used to the dog. If you're saying that you moved and got a new dog, then that's very stressful for the cats and it will take them a while to calm down.
