I have a male lab/coonhound mix that is a year old and his behavior concerns me. He's stayed at a doggy daycare place where 6-8 other dogs have free range of a house and fenced in yard and he's loved it every time. The lady who watches him always tells me how good he does there. And if my fiancé walks him on a leash and approaches other dogs he's fine with them being there. However, if a dog, person, or anything else comes near me, he will try to attack it. If I pet my other dog around him, he starts fighting. But if I'm not touching them they will play all day with no problem. How can I fix this? Basically nothing can come near me without him thinking its a threat.

It sounds like he might be resource guarding you. I would check out this sticky to learn about Resource guarding.
