I'm so sorry you have to deal with that. I work in a dog boarding/day care Center right now and I can't believe at least one group will be left unsupervised. At work we have to complete a series of DVD's to learn about body language and whatnot and even after that we have to get trained in group. Smalls and larges are always separated and there will always be one group leader in the group. We have ear pieces as well so it's easy to communicate with one, whether it's something simple or whether it's about a fight that occurred. All dogs have their own rooms so we pull them back if necessary. We don't put gentle leaders on the troublemakers (I'm not too sure how this will 'solve' a problem happening in group) but we have kennels in the play area for time out.
