The dog is a Thai street dog. It has a fairly long snout, pricky/pointy ears and its tail curls upwards (as seen in attached photos).

After spending some time with a breed recognition app, I came across some slight matches:

Dingo (long snout, pointy ears and same shaped face)
Shiba Inu (curly tail, long snout and curly tail)

It is a small - medium sized, fully grown dog (around the same size as a Shiba Inu.)

I am positive that it is a mixed breed dog.

It is around 11 years old.

Maybe a basenji mix? Dingo mix? It's really hard to tell with Thai dogs, they're almost a sector of their own!

did she get him through the soidog foundation? How's he doing? I've considered a thai dog from the soi project before but I've never met anyone who went through with one!

A dingo mix looks to be the most likely candidate.

I have found another breed called a Carolina Dog, which bears striking similarities nicknamed the American Dingo.

It could be part Jindo. I know they're Korean, but still. Probably about as likely as a Japanese Shiba Inu. ;)

As you said, he is a mixed breed dog. What the mix would be depends on the local dogs running loose which are probably also mixed. No matter what the dog looks like, he would not be a Carolina Dog, probably not a Dingo cross or Shiba Inu just a mixed dog probably from mixes

If that dog is from anywhere other than Australia (like Thailand) the likelihood of him being dingo is pretty much zero.

Same with Carolina Dog, you aren't going to find those in Thailand. Those are a landrace of wild dogs in the US.

Most likely a mix. I'm not familiar with all of the Asian dog breeds but it seems like they have a ton of spitz type dogs, which your girlfriend's dog definitely looks like. Spitz dogs have pointy ears and curly tails, and include breeds like the Shiba Inu and Jindo that were mentioned. I could also see some terrier in there, if Jack Russells or a similar breed are common at all in the area he came from.
