my interpretation is strongly protesting, sprays are often used to punish dogs as they hate them so much. It's very common for dogs to react to sprays to the degree that some people carry them to ward off dogs.
So, to be on the safe side (emotionally safe), I would put that little spritzer away or least not aim it at your dog.
I'm assuming it's nothing but water, but even a can of compressed air can be used to startle or frighten a dog (another thing some people carry to keep dogs away), so I'd just assume she's not having fun at all.

That said, sometimes just the right amount of 'scary' is fun. So it might be why you're asking. If it's fun, it's a high adrenaline sort of fun, like bungee jumping off of a sky scraper, or jumping out of a parachute, or for boring folks like me, going on an 'all ages' roller-coaster. This might explain 'mixed messages' if you are getting any.

The play bows, the barking and wagging tail all look like signs of play, but the dog is so intense about those signs that maybe it's trying to tell you to stop with the spray with exaggerated play signals? Dogs and cats hate sprays, mine IMMEDIATELY start melodramatic gagging, sneezing and coughing if I even spray on some perfume or hairspray and act like they're going to keep over and die immediately. My last dog was the most dramatic about it.
So I wouldn't spray anything at the dog unless there's a specific behavior that you're trying to eliminate.

'bolded' is a perfect description of what I was thinking is going on.

I use to have a dog that loved being sprayed...with the garden hose, or a bottle of water. One thing I remember about her, was she liked to 'rush' at the water flow and bite it. And when I stopped it ... she would excitedly jump a bit and wag her tail and seem to want me to do it again. Sometimes I would go outside and see her chasing the sprinkler water jet around in the circle.

Your little dog seems to get some kind of enjoyment out of it, as there is room for the dog to get away from it if they wanted to... Have you ever brought the spray nozzle up to your hand and sprayed it in your hand with your dog close by to see if they come forward to lick at the water on your hand, or show curiosity about the water coming our of the nozzle? If the dog does that, and seems playful about it, it might not mind the spray. And the mixed signals might also mean they kind of like it, but don't know what to do about it in regards to playing with it...given water's not something that can be grabbed and given a good head shake...lol.

I think too that if that is a play device...that is the ONLY thing you should use it for... don't use it as a punishment...nor punish one time then try to get the dog to play with it another time.

In that video, your dog is definitely not enjoying being sprayed. I would not play that particular game, since it's stressful for your dog, and also because I don't like to play any game that encourages my dogs to bark at me (or feel such conflicted emotions)!

If you think your dog wants to play with water, maybe try giving her a bowl/tub to splash in, or a predictable stream of water that isn't pointed at her & which she gets to choose how to interact with. Or there are lots of other fun ways to play.

Cute doggy!
