We've been firm about not playing with our hands to discourage nipping and I've taken her to visit friend's dogs but our vet has told us to keep her away from dogs unless we know they are vaccinated. So I'm trying to socialize as much as possible! Any tips on preparing or advice on introducing a playful pup to anxious dogs would be really helpful!

I would not leave your new pup with two dogs who are very anxious, things may not go so well.
I would organise a meeting with these dogs before you go away and do it slowly , keeping your pup on a lead or introduce though a screen door. Things like that.
Are the two dogs up to date with their vaccinations? Your vet is correct in making sure dogs that you meet at others houses are vaccinated.
If these two poms are not or you are not sure I would not risk it.
You may need to look into other alternatives for your pup while you are away. (pet sitters, friends to look after pup etc.)
And if one of your family member is anti pit bull how can you be sure they will do right by your pup? Feeding? Human interaction, playtime etc.?
I would be very cautious.
One of the poms are food aggressive? This is not a good example for your pup, he may develop a fear of other dogs or may inturn become food aggressive himself, he needs positive training/reinforcement not negative, and it sounds like a negative household (with the two poms.)
