Welcome , wow that is quite a combination .
Would love to see pics of the cutie.
I have no idea how big your pup will get .
As for the shedding it would most likely be like any average dog that sheds.

What a mix. With a hair coat (wirey type hair) they do tend to shed, but it really is a time will tell thing. Peekaneese and Poodles are both non shedding, coonhounds on the other hand coonhounds can shed a ton.

She is cute! Look forward to seeing adult pictures of her.

It really will be a wait and see thing! Mixed breeds don't have a certain ratio of traits they will inherit from their parents. So 50% Coonhound/25% Pekenese/25%Poodle doesn't necessarily mean she will get 50% of her size from the Coonhound, or have a 25% chance that her coat will be like a poodle's. It's a bit more complicated than that. It's likely that she will be a nice middle size with a mixed coat, but she could be just as big as a Coonhound with a coat exactly like a Pekapoo. She might have a puppy coat that's wiry and hairy, but shed out to a completely different coat texture as an adult.

It will be exciting to see how she turns out!

Patience. A new baby pup is going to cry and whine and test your patience in every way you could ever imagine. They are babies in every sense possible. If you're not yet, crate train her now.
