They do not have a muscle down the back. What Ridgebacks have is called a cowlick, and it is usually the first thing to go when they are mixed with another breed.
I've seen a few RR mixes and this is always the case. They tend to have the big body, long legs, and sometimes the reddish coat, but never the cowlick as it's generally a trait only pure Ridgebacks display.
What's happening to your dog is likely just the hackles raising, which happens to all dogs and cats when they get excited or agitated. You can liken it to the hair on the back of your neck standing up when you get nervous, watching a scary movie or something. :P It's an involuntary physical reaction that has nothing to do with breed. If you like, you can post some pictures of your dog standing, facing the camera and side profile. Folks on this forum love guessing mixes!
