I rescued all but 2 of my dogs in the last 40 years from the shelter. None of the dogs I rescued from the shelter were puppies. Not one of them ever hurt my children or me. If the pup is gentle now there is no reason to think she will be anything but gentle if you teach your children to be kind and gentle with her. Dogs that are raised with kindness and positive training have no reason to turn out mean. I would be very careful about the cat though. Keep the new dog on a leash around the cat so you can make sure nothing bad happens when they meet.
