As the title states. Looking for what size collar will fit my GSP later on. I want to order a nice leather collar with name plate but I don't know what size to order for him. I want it for later because as of now I'm just using a generic fabric collar.
If you are planning on dropping a good amount of money on a sweet collar, maybe it would be a good idea to wait until your GSP is about adult size before ordering one to ensure a good fit?
Most especially if you're planning to shell out $$$ on a collar that's not very adjustable, it'd definitely be better to wait until he's at least near his full-grown size to order it.
An inexpensive regular old collar should suffice just fine until then.

I can only offer my own experience:
I have a GSP mix. She's a now-6-y/o, 53lb female, & was the "runt" of her litter (gosh, most of her sisters were straight monstrous in size compared to her, but most of them also clearly ended up w/ a lot less of the GSP genetics, my girl was the most GSP influenced of the lot), so I imagine your boy may likely end up being a bit bigger.
But for my girl, I have a Timberwolf "Alpine" collar in a size of 16" (I have not measured around her neck recently, but I know that when I bought that collar 2-3 years ago, her neck measured right about 17" in circumference). It is adjustable, but only by about 1-2" due to the round/rope design of it. It's also stretched out a fair bit over the last couple years I've had it. A leather collar will almost certainly end up stretching to a certain degree as well.
When I first got it for her, it had to be adjusted as big as it could possibly be for daily wear, & only made slightly smaller for leash walking. But now, for daily wear it does best adjusted just about "in the middle" of the size range, & for leash walking must be made as tight as it can, & even then could definitely still stand to ideally be a touch smaller.

I'm not going to try drawing any conclusions from that which may or may not end up being applicable to your dog; if you choose to, that's on you.
It would definitely be best though to wait until he's fully grown or at least close.
I know it's fun & exciting to select & purchase nice new gear for our animal companions, but if you end up spending a lot of money on a high quality custom collar that is either too big or too small once he's grown, you may regret it.
There are dog gps trackers out there that has re-adjustable collars to fit most dogs.
