My dog plays too rough!

I recently rescued a 2 year old lab/St. Bernard mix. He's 75 pounds and is house trained. I have two problems.

1. When playing, he lunges at me from about 4-5 feet away while mouthing. I've followed advice to immediately stop playing. He gets it for a few minutes but resumes the following time he plays. Its violent and unsafe. What can I do?

2. I need a place for him to run and play, but most of the nearby dog parks are not fully fenced in. He has escaped before and I spent hours chasing him down. He is still learning his name and I can't risk losing him again. How can I get him full exercise when he doesn't know his name and can't be trusted unleashed?

that's a big dog. I suggest exercising him at home premises only if you can't control him too well. You can adjust after some weeks where I believe you can take him out to the park.
